Breakfast: Egg in a Basket

Lay the oil low
in the pan,
pressed flush like sheen of sweat
seen below the collar bone.

Like this;
Tap the shell— No
Not a tap
like touching baby soft spots.
Insert the thumb into the crack—
Don’t be afraid of membranes stretching,
the yawning, seeping
the yellow eye peeping.

Like this;
Spill the yolk. Fill the bread;
watch where a center circle was born away
with a palmed cup, a rim firmly
depressed.

Like this;
Watch for the brightening,
translucent to white. Lightening—
The crusts crisp, spatula slides
Beneath—
Be brave!
And

Flip!
